      Chicken and ricotta cakes

      Sometimes leftovers are the reasons of creating something new and delicious recipes. Leftover rotisserie chicken and ricotta lying in my refrigerator, so i thought why not mix chicken with ricotta and throw in some fresh vegetables and some dried herbs and make patties out of it. 
      Chicken and ricotta cakes are very moist and flavorful patties in which leftover chicken is mixed with ricotta cheese, green onions, sweet peppers, jalapenos, thyme and cumin, then coated in bread crumbs and  shallow-fried. This recipe is perfect with leftover rotisserie chicken or baked chicken or roast chicken.
      The patties are good mainly because of the cocktails of spices used and of course ricotta which makes it moist and tender. The earthy flavor of cumin combines well with aromatic thyme, oregano and spicy jalapenos. This recipe combines Spanish and Italian flavors together, thus creating new recipe all together .

      Yields :- 10 chicken ricotta cakes
      Ingredients for chicken and ricotta cakes :-

      • 2 cups of cooked chicken, shredded
      • 1/2 cup of part skim ricotta cheese
      • 1 jalapenos, finely chopped
      • 4 green onions, finely chopped
      • 3 large garlic clove, finely chopped
      • 3 Tbsp of red bell pepper, finely chopped
      • 1 tsp of dried oregano and thyme each
      • 1 tsp of cumin powder
      • 1 egg
      • 1/2 cup of bread crumbs
      • Salt and pepper to taste
      • Oil for shallow frying

      Method for chicken and ricotta cakes :-

      1. In a big bowl, mix everything together except oil and bread crumbs.
      2. Divide the mixture into 10 equal parts and form patties.
      3. Coat each patty with bread crumbs and refrigerate for 30 minutes.
      4. In a wide pan, heat oil and place the patties in the hot oil. Do not over crowd the pan, there should be enough space between each patties.
      5. Cook the patties on both side until it is golden brown on both sides. (will take 3-5 minutes per side)
      6. Chicken and ricotta patties are ready to serve.

      Serve warm chicken and ricotta patties with brown rice salad .
      You can also make burgers out of it.
