I love herbs and I try to add in what ever I am cooking even desserts. It’s a really good way to add in a bunch of good flavors. So this time when I was about to bake cookies, I thought of adding thyme and lime zest and it turns out to be pretty good.
Thyme and lime cookies are Vegan cookies with lots of flavors, thanks to Thyme leaves and lime zest and it is super crunchy. It also has coconut oil and rice flour which helps the cookies to get crunchy. These cookies are not super sweet like other cookies but you can add more sugar if you like it super sweet.

Ingredients
1 cup of all purpose flour
1/2 cup of rice flour
1/2 tsp of baking soda
A big pinch of salt
1/2 Tbsp of chopped fresh thyme (discard the stems)
zest of 2 limes
1/2 cup of coconut oil
1/3 – 1/2 cup of sugar
1/4 cup of water or milk
Directions
- In a bowl, mix flour, rice flour, baking powder, salt, thyme and lime zest.
- In another bowl, mix oil with sugar and beat well. Add the water and mix well.
- Now add the flour mixture little by little into the oil mixture and mix gently until dough come together.
- Put the dough in plastic wrap and roll the dough into a log shape with the help of a plastic wrap.
- Refrigerate the dough for 30 minutes. Then cut it into 1/4 inch circles.
- Bake the cookies in preheated oven at 350 F for 12 -14 minutes.
- Let the cookies cool down a bit then transfer the cookies on to the tray.
