Figs Apricot Burfi with Almonds and Walnuts

Fig apricot burfi with almonds and walnuts are soft, sticky and grainy bars which are healthy and tasty at the same time. Crushed roasted walnuts and almonds cooked in a pureed fig, apricot and dates mixture with coconut milk and spread out on a plate, cooled and cut into squares.
These are perfect for post or pre workout snack. These burfis are full of healthy fat and other necessary nutrition. The best part is not having any refined sugar in this recipe as dates, figs and apricot provides all the necessary sweetness required for this sweet treat. This recipe is totally vegan and pretty easy to make.

Fig apricot burfi with almonds and walnuts are soft, sticky and grainy bars which are healthy and tasty at the same time.

Ingredients

  • 15 dry figs

  • 20 dates

  • 15-20 dry apricots

  • 1 cup of almonds

  • 1 cup of walnuts

  • 2/3 cup of coconut/almond milk

  • 2 tsp of coconut oil or ghee

  • 1 tsp of cardamom powder

Directions

  • Soak figs and dates in a hot water for 20 minutes.
  • Dry roast walnuts and almonds until it is nice and toasty.  Once the nuts gets cool down, coarsely pulse it.
  • Take out the figs and dates from water and squeeze it gently to remove extra water.
  • Put figs, dates and apricots in a food processor and pulse it until it is pretty fine.
  • Heat a wide pan, add the milk, ground fig mixture and coconut oil/ghee and mix well.
  • Cook on a low-medium heat until all the liquid gets absorbed.
  • Add in the crushed nuts and mix well and cook further for a minute.
  • Add the cardamon and mix well and switch off the heat.
  • Grease a wide plate or tray with coconut oil or ghee. Put the nuts and fruits mixture into the tray and level it off.
  • Let it cool down completely before cutting it into squares or any shape you like.

Notes

  • Serve figs apricot burfi with almonds and walnuts with hot tea or coffee.
  • Give it a taste when you add nuts into the mixture and add a desired amount of  sugar if it less sweet for you or if it is too sweet for you then add flax seed meal to it to adjust the sweetness.
  • You can add your choice of nuts or dry fruits in this recipe.
