Hot and Sour Soup

Ingredients
Half of medium carrot, finely chopped
Half of medium onion, finely chopped
4 green onion, finely chopped
1 stalk of celery, finely chopped
1/4 cup of finely chopped cabbage
1/4 cup of corn kernels
2 Tbsp of finely chopped green bell pepper or capsicum
6 big garlic cloves, finely chopped
2 Tbsp of finely chopped ginger
4 cups of low sodium veg/chicken broth or stock
1 Tbsp of vinegar
1.5 Tbsp of soy sauce
Green chilli sauce to taste
1.5 Tbsp of corn flour
1/2 tsp of black pepper
1 Tbsp of oil
salt to taste
Directions
- Heat oil in heavy bottom pan and add ginger and garlic and stir for 30 seconds.
- Then add onion and white part of green onion and stir until it’s translucent.
- Now add celery, corn and carrot and stir for a minute.
- Now add cabbage, bell pepper and stock and let it comes to boil.
- In a small bowl add corn flour to 4 Tbsp of water and mix well.
- When stock comes to boil, add soy sauce, chilli sauce, vinegar, black pepper and flour mixture and mix well.
- When the soup get slightly thickens, turn off the stove and add green part of onion .
- Hot and sour soup is ready to serve
Notes
- You can make it a hot and sour noodle soup by adding broken noodles at the time of adding stock.
- Add some rotisserie chicken pieces to call it a chicken hot and sour soup.
