Pav bhaji is a very popular street food of Mumbai which is devoured by foodies. Wide variety of vegetables cooked together with onion-tomato masala and fully flavored with butter and a special blend of spices.

Ingredients

  • 3-4 medium potatoes, cubed

  • 1/2 of small cauliflower, cut into florets

  • 15 green beans, cut into 1 inch pieces

  • 1/2 cup of green peas

  • 1 small carrot, cubed

  • 1 medium green bell pepper/capsicum

  • 4 medium tomatoes

  • 2 green chillies

  • 2 medium onion, finely chopped

  • 1 inch of ginger, minced

  • 20 garlic cloves, minced

  • 2 Tbsp of pav bhaji masala

  • 1/2 tsp of turmeric powder

  • 2 tsp of kashmiri red chilly powder

  • 2 Tbsp of oil + 4 Tbsp of butter+oil

  • 1/4 cup of chopped coriander leaves or cilantro

  • Salt to taste

  • 1 lemon, juiced

  • 12 pavs or dinner roll

  • 2 medium onions, chopped for serving

Directions

  • Put potatoes, cauliflower, peas, carrot, green beans with enough water and let it cook till all the vegetables are fully done.
  • Heat oil in a pan and saute ginger, garlic, green chillies and onion for few minutes till it becomes translucent.
  • Then add capsicum and let it cook for 5 minutes. Now add all the dry spices which is mentioned above and saute for a minute.
  • Now add tomatoes, salt and saute until it is tender and mixture releases oil.
  • Now add all the boiled vegetables and mash everything with a masher.
  • Lastly add in the cilantro, lemon juice and 2 Tbsp of butter. Bhaji is done.
  • For pav, split the pav and apply remaining butter and toast it on a hot pan until it becomes golden brown.
  • Serve bhaji with pav and chopped onion.
