Shrimp and Peppers Pasta

A pasta dish with shrimp, green and red bell pepper and lots of garlic. Addition of white sauce enhances this dish by giving it a smooth and creamy texture.

Shrimp and Peppers pasta is a dish in which whole wheat pasta is added to sauteed shrimp with peppers and creamy white sauce.

Ingredients

  • 1/2 lb of whole wheat or regular penne/orecchiette/Conchiglie/fusilli pasta

  • 1 lb of shrimp, peeled and deveined

  • 1 big red onion, finely chopped

  • 5 big garlic, finely chopped

  • 1 big green bell pepper, finely chopped

  • 1 big red bell pepper, finely chopped

  • Red pepper flakes to taste( I used 1 tsp)

  • 1 big lemon juiced and zested

  • 2 Tbsp of chopped parsley/cilantro

  • 1/2 tsp of black pepper

  • Salt to taste

  • 2 tsp of oil

  • 2 Tbsp of butter

  • 2 Tbsp of all purpose flour

  • 1 big garlic, grated

  • 1/2 tsp of red chilly flakes

  • 1 cup of shrimp stock

  • Salt and black pepper to taste

Directions

  • Cook pasta in enough water and salt, according to package direction.
  • Marinate shrimp with juice of 1 lemon, salt and pepper for minimum 15 minutes.
  • For White sauce :-
  • Melt butter over low heat in a pan and add flour and whisk for 2 minutes until well combine and the flour has no more raw taste and add garlic, red chilly flakes, pepper and salt.
  • Now gradually add milk and shrimp stock, whisking constantly. Simmer for 3-5 minutes or until it’s thick and smooth. Add little more flour or milk if it becomes very thin or thick as it should be of sauce consistency..
  • Shrimp and Peppers :-
  • Heat oil in a pan and add onion and green bell pepper and let it cook for 6-8 minutes, stirring often until tender.
  • Stir in garlic, red chilly flakes and salt and let it cook for 2 minutes.
  • Now add red bell pepper and shrimp with its marinade and mix well. Cook for 3-4 minutes, stirring frequently until the shrimp turn pink and is cooked through.
  • Now add pasta and pour hot white sauce over the pasta and mix well. Turn off the flame.
  • Stir in lemon zest and parsley and mix well and serve immediately.
