Ingredients
2-3 medium size beetroot (cooked )
Handful of mint leaves
Juice of half large lemon
Handful of roasted peanuts and walnuts mixed
1/2 tsp of black pepper
Salt to taste
Directions
- Dice the cooked beetroot and chop the mint leaves and put everything together in a bowl with lemon juice,salt and black pepper.
- Toss peanuts and walnuts over it and mix.
- Beetroot and mint salad is ready. Serve with fried rice or rice and dal.
