Beetroot is fully packed with necessary vitamins and minerals that we need in daily basis. It is rich in folic acid, fiber, potassium and manganese. This refreshing beetroot and mint salad combines cooked beetroot together with lemon juice and fresh mint and then top with roasted peanuts. A very nice way to include beetroots in your diet.

Beetroot Mint salad is a refreshing sweet and tangy salad recipe with crispy peanuts on top.

Ingredients

  • 2-3 medium size beetroot (cooked )

  • Handful of mint leaves

  • Juice of half large lemon

  • Handful of roasted peanuts and walnuts mixed

  • 1/2 tsp of black pepper

  • Salt to taste

Directions

  • Dice the cooked beetroot and chop the mint leaves and put everything together in a bowl with lemon juice,salt and black pepper.
  • Toss peanuts and walnuts over it and mix.
  • Beetroot and mint salad is ready. Serve with fried rice or rice and dal.
