Aloo gobi matar / cauliflower curry

Aloo gobi matar or cauliflower curry is a very common day to day dish in every Indian kitchen. In winter season, cauliflower is in season and very cheap too, so it is often cooked by many people in India. Cauliflower, potato and peas makes a great combination together. Apart from tasty, aloo gobi matar is also a healthy entree which goes really well with roti or rice.

Aloo Gobi Matar is a simple but delicious cauliflower and peas curry which goes really well rice or roti (Indian Flatbread).

Ingredients

  • 1 medium size cauliflower cut into florets

  • 2 medium potatoes, cubed

  • 1 cup of peas

  • 1 big onions finely chopped

  • 3 medium tomatoes finely chopped

  • 2 tsp of minced ginger

  • 5 large garlic cloves minced

  • 2 green chillies

  • 1 Tbsp of coriander powder

  • 1 tsp of cumin powder

  • 1/2 tsp of turmeric powder

  • Red chilli powder to taste

  • 2 tsp of garam masala

  • 1 tsp of mustard seeds

  • 1/2 tsp of fennel seeds

  • 2 Tbsp of chopped cilantro

  • salt to taste

  • 1 Tbsp of oil

  • 1 cup of water

Directions

  • Heat oil in a pan, splutter mustard seeds, then add fennel seeds followed by onions, salt and cook for 2-3 minutes.
  • Now add green chilies, ginger and garlic and saute till the mixture becomes light brown, then add all dry spices and stir for 1 minute.
  • Now add tomatoes and cook till the oil separates.
  • Add potatoes and water to the tomato mixture and let it boil for 3-4 minutes.
  • Then add cauliflower, peas and put on the lid and simmer for about 8-10 minutes until the cauliflower and potatoes are fully cooked .
  • Lastly, toss in the cilantro and mix well. Aloo gobi matar or cauliflower curry is done.
  • Serve aloo gobi matar or cauliflower curry with hot chapati or rice and dal………
