Baingan bharta is a eggplant recipe in which fire roasted eggplant is mashed and cooked with sauteed onion and tomato mixture. The smokiness of this side dish is what makes it special.

Ingredients

  • 2 medium purple eggplant

  • 1 large onion, finely chopped

  • 2 large tomatoes, finely chopped

  • 6-8 medium garlic cloves, finely chopped

  • 1/4 tsp of mustard seeds

  • 2 green chilies, finely chopped

  • 1/2 tsp of turmeric

  • 1 Tbsp of cilantro, chopped

  • Salt to taste

  • 1 Tbsp of oil

Directions

  • Roast eggplant over a gas burner turning it frequently for uniform roasting. It is done, when the skin of eggplant is tearing up and fully blemished. When the eggplants are cooled, peel its skin and mash the flesh well.
  • Heat oil in a pan and crackle mustard seeds, them add onion and green chilies and stir until onion is translucent.
  • Then mix in the turmeric, garlic and tomatoes and cook this mixture until the tomatoes are tender and soft.
  • Now add the mashed eggplant, salt and mix everything together and cook for another 6-8 minutes over low-medium heat.
  • Lastly mix in the cilantro. Serve baingan bharta with chapati or dal and rice.
