Black eyed peas is a simple but tasty curry in which black eyed peas is cooked with onion and tomato mixture and spiced up with sambhar powder.

Ingredients

  • 1 cup of dry black eyed peas, soaked overnight

  • 1 big onions finely chopped

  • 3 medium tomatoes finely chopped

  • 4-5 medium garlic cloves minced

  • 1 Tbsp of coriander powder

  • 1/2 tsp of turmeric

  • 1 tsp of mustard seeds

  • Red chilly powder to taste

  • 2 tsp of sambhar powder

  • 2 Tbsp of chopped cilantro

  • salt to taste

  • 1 Tbsp of oil

  • 1 cup of water

Directions

  • Cook black eyed peas in enough water with salt till they are soft and tender.
  • Heat oil in a pan, splutter mustard seeds and add onions, salt and cook for few minutes.
  • When onions are translucent, add all dry spices and saute for few minutes .
  • Now add garlic and tomatoes and cook it till oil separates.
  • Add cooked black eyed peas to the tomato mixture and mash it little bit, then add water and cook further for about 3-4 minutes.
  • Lastly, toss in the cilantro and mix well and black eyes peas is done. Serve with steamed rice or roti.
