Black Eyed Peas Curry / Jhurga Sabji / Lobia Masala Recipe

hoursBlack eyed peas is a simple but tasty curry in which black eyed peas is cooked with onion and tomato mixture and spiced up with sambhar powder.
Ingredients
1 cup of dry black eyed peas, soaked overnight
1 big onions finely chopped
3 medium tomatoes finely chopped
4-5 medium garlic cloves minced
1 Tbsp of coriander powder
1/2 tsp of turmeric
1 tsp of mustard seeds
Red chilly powder to taste
2 tsp of sambhar powder
2 Tbsp of chopped cilantro
salt to taste
1 Tbsp of oil
1 cup of water
Directions
- Cook black eyed peas in enough water with salt till they are soft and tender.
- Heat oil in a pan, splutter mustard seeds and add onions, salt and cook for few minutes.
- When onions are translucent, add all dry spices and saute for few minutes .
- Now add garlic and tomatoes and cook it till oil separates.
- Add cooked black eyed peas to the tomato mixture and mash it little bit, then add water and cook further for about 3-4 minutes.
- Lastly, toss in the cilantro and mix well and black eyes peas is done. Serve with steamed rice or roti.
