These cookies are special as it reminds me of the cashew cookies which we used to have back in India. Coarsely chopped cashews, pistachios and little rice flour makes it a sweet delight.

minutesThese cashew cookies are made with mixture of white, whole wheat and rice flour mixed with cashews, sugar and butter.
Ingredients
1 cup of all purpose flour
1/4 cup of whole wheat flour
1/4 cup of rice flour
8 Tbsp of room temperature butter(1 stick)
1/4 cup of brown sugar
1/4 cup of white sugar
1 Tbsp of honey
1 Tbsp of milk
1/2 tsp of baking powder
1/3 cup of coarsely chopped cashews and pistachios
Pinch of salt
1/2 tsp of vanilla extract
Directions
- Cream butter and both the sugars together in a bowl until fluffy. Then add milk, honey and vanilla and mix well.
- Now in another bowl mix all purpose flour, whole wheat, rice flour, baking powder and salt together.
- Slowly add the dry mixture into the wet one and mix until well combined and form a smooth dough.(Do not knead it too much just mix well). Stir in the cashews and pistachios.
- Cover the dough with plastic wrap and keep it inside the refrigerator for 1 hour.
- Preheat the oven to 375 F and line the baking tray with parchment or wax paper.
- Roll out the dough to about 1/4 inch and cut into desired shape and place it on the tray.
- Bake it for 10-12 minutes. Let the cookies cool down a bit then transfer them onto a rack.
- When the cookies are completely cooled, store it in airtight container.
