A simple and easy orange pudding recipe with milk, eggs, sugar and orange juice. Came up with this recipe when i had too many oranges siting on my kitchen counter. I always make orange cake but this time I thought i will make something different with orange. And I tried this orange pudding recipe for the first time and I was pretty happy with the result.

Ingredients
1 cup of milk (I used 2% reduced fat)
2 eggs (white and yellow separated)
1/2 cup of sugar (white or brown)
1 tsp of mandarin/orange zest
1/4 cup of mandarin/orange juice
2 Tbsp of all purpose flour
1 Tbsp of butter (room temp.)
Pinch of salt
Directions
- Preheat oven to 350 F and grease 4 ramekins or any baking dish. Separate the yolks from whites.
- Beat sugar, butter and egg yolks together. Next add orange/mandarin zest, juice, salt and flour and mix again.
- Now slowly add milk little by little and keep whisking .
- Now in another deep bowl, beat egg whites using electric mixer at medium speed till firm peaks form.
- Fold in beaten egg whites to the above batter. Do not over mix, just fold it slowly. Pour batter into ramekins.
- Put all the ramekins in a baking pan and fill the pan with enough boiling water to come about halfway up the sides of the ramekins.
- Bake uncovered for 30-35 minutes. If using baking pan for pudding then cooking time will increase by 10-15 mins.
- Serve orange custard pudding warm or cold but it’s best when it is chilled.
Notes
- When beating egg whites, make sure that the beater or bowls has no traces of oil as it gives a hard time to form peaks
