Cream cheese mixed with strawberry jam poured over oreo cookie crust and baked to perfection.

I am a big fan of cheesecake and chocolate, so this recipe really works for me. If you are not a chocolate person, then just skip oreo cookies and make a regular crust with graham crackers and butter. The strawberry jam and lemon zest together in the filling gives a fruity flavor and nice color to this mini cheesecake. This beautiful strawberry mini cheese cake with Oreo crust is a perfect little yummy dessert you can make for parties or potluck.

Ingredients

  • For Crust :-
  • 12 oreo cookies

  • 2 Tbsp of butter, melted

  • 1/3 cup of sugar

  • For Filling :-
  • One 8-ounce of cream cheese(use regular or low fat)

  • 1/4 cup of drained yogurt/sour cream(use regular or low fat)

  • 1/3 cup of sugar

  • 4 Tbsp of strawberry jam

  • 1/2 tsp of vanilla extract

  • Zest of one lemon

  • 2 tsp of cornstarch

  • 1 egg

Directions

  • Preheat the oven to 350F and line 12 muffin cups with paper liners.
  • Grind the cookies into crumbs and mix well with butter.
  • Now divide the crumbs equally into the 12 muffin cups and press it down. Refrigerate it for 10 minutes.
  • Beat cream cheese, sugar, yogurt,  jam and vanilla until it is smooth and creamy. Do not over beat it.
  • Put the tray in the oven and bake it for 20-25 minutes. It will be a little firm on the outside but still be jiggling at the center.
  • Let the mini cheesecake cool down completely, then refrigerate it for about 3-4 hours, so it can set fully.
  • Strawberry mini cheesecake with oreo crust is done and ready to serve.

Notes

  • Make sure not to beat cheese mixture too much and also do not over bake otherwise cheesecake will get cracked on the top.
  • Serve strawberry mini cheesecake with fresh berries compote or chocolate syrup.
  • If you are vegetarian and want to make it eggless, just double the amount of cornstarch.
