Palak Dal / Lentil with Spinach Recipe

minutesPalak Dal is a Indian dish made with yellow lentils and spinach, seasoned with mustard and cumin seeds.
Ingredients
3/4 cup of toor dal
1 bunch of spinach about 2 to 2.5 cups
1 medium sliced onion
2 medium tomato, chopped
1 tsp of cumin seeds
1/2 tsp of mustard seeds
1/4 tsp of asafoetida
1 tsp of grated ginger
4 minced garlic cloves
Green chilies to taste
1 Tbsp of lemon juice
1 Tbsp of cilantro leaves
Salt to taste
Directions
- Wash and pressure cook the dal with tomatoes, turmeric, salt and enough water.
- Heat oil in a deep pan, pop mustard seeds, then stir cumin seeds, asafoetida, green chilies and ginger together for a 30 seconds.
- Now add onion, garlic, salt and mix. when onions are light brown, add spinach and saute for 1-2 minutes.
- When spinach is wilted, add dal and let it comes to boil.
- Now mix lemon juice and cilantro and Palak Dal is done. Serve with steamed rice.
