Plantain Bhurji

minutesPlantain bhurji is a recipe in which boiled and mashed plantain is tempered with mustard seeds, curry leaves and urad dal. Plantains are high in fiber, potassium and vitamins A and C.
Ingredients
2 plantain boiled and mashed
1 tsp of mustard seeds
2 tsp of urad dal
1/4 tsp of turmeric powder
1/2 tsp of chilly powder
1 tsp of chopped garlic
1 tsp of ginger
Few curry leaves
Salt to taste
1-2 Tbsp of oil
Directions
- Heat oil in a pan and pop mustard seeds ,then add urad dal, ginger, garlic, curry leaves and stir for few seconds.
- Then add all the dry masalas and stir again for few seconds.
- Now add mashed plantain with salt and mix. Cook until it get warm through. Plantain bhurji is done. Serve with hot rice and kadhi or with roti.
