- 1 cup of nutrela / soya chunk
- 1 cup of rice
- 3 medim onions, sliced
- 3 medium tomatoes, finely chopped
- 1 tsp of grated ginger
- 1.5 tsp of grated garlic
- 2 dry red chillies
- 1 large carrot, sliced vertically to 1.5 inch
- 2 Tbsp of chopped cilantro
- 3 green cardamom
- 1 black cardamom
- 1 inch of cinnamon stick
- 6 cloves
- 1 bayleaves
- 1 tsp of coriander powder
- 1/4 tsp of cumin powder
- 1 tsp of garam masala
- 1/2 tsp of black pepper
- 1/4 tsp of turmeric
- Salt o taste
- 1 Tbsp of oil or ghee
- Rinse rice with cold water 3 times, then soak it for 1 hour.
- Boil 2 cups of water with little salt and put nutrela or soya chunks in it and boil for 6-8 minutes. When it cools down, squeeze the water out of nutrela and set aside.
- Heat a pan with oil and add cinnamon, cloves, bayleaves, dry chillies and both the cardamom and saute for a minute.
- Then add onions and let it cook for 5 minutes. Then add ginger and garlic paste and again saute until the onions are golden brown.
- Now add coriander, cumin, garam masala, black pepper, turmeric and saute for a minute.
- Add the tomatoes, salt let it cook for 5 minutes.
- Now add soya chunks or nutrela and put on the lid and let it cook for another 5 minutes.
- Add in the carrots and again cook for 3-5 minutes.
- Now drain the rice and add it to the soya chunk mixture and mix well. While adding rice make sure there is no water in the soya mixture.
- Add 2 cups of water and half of the cilantro. Check for the salt and put on the lid.
- Cook until the liquid is absorbed and rice is fully done.
- Add rest of the cilantro and soya chunk biryani or nutrela biryani is done.
