Uttapam recipe / onion tomato uthappam

Uttapam is a beautiful, colorful and delicious southIndian breakfast recipe, in which thinly sliced vegetables like onion, tomato, carrot and cilantro are spread over thick dosa batter and cooked golden brown on both sides. Uttapam is like an Indian version of pizza but lot healthier and with no cheese ofcourse. The choice of vegetables are up to your likes. Uttapam is one of the very popular dishes in south indian restaurants. The color of different vegetables makes this uttapam so beautiful and also delectable. Though it will take time, if you are making the uttapam batter from scratch as it requires soaking and fermenting process. But if you already have some left over batter from idli or dosa then it will be done in few minutes. So whenever you make idli or dosa, just double the amount of rice and urad dal while soaking, so you have some remaining left over batter for the next morning and the best part is you will be releived of thinking about your tomorrow's breakfast . 
Uttapam is served with chutney and sambhar.

Yeild :- 8 uttapams "uttapam
Ingredients for uttapam:-

  • 3 cups of dosa batter
  • 1 thinly sliced medium red onion
  • 1 medium tomato, finel chopped
  • 1 medium carrot, thinly sliced to 1 inch pieces
  • 1 green chilly, finely chopped(optional)
  • 2 Tbsp of chopped cilantro
  • Salt and pepper to taste
  • 4 Tbsp of oil 

Method for uttapam :-

  1. Mix all the vegtables in a bowl and keep it aside.
  2. Heat a skillet or griddle over low-medium heat. Spread oil and pour 1/3 cup of batter and spread the batter with the back of the laddle into a circle of 6 inch diameter. 
  3. Let it cook for about 10 seconds, then spread vegetables over the batter. Sprinkle salt and pepper and pour 1/2-1 tsp of oil over the vegetables and let it cook for about a minute over low-medium heat
  4. Flip the uttapam when it is no longer sticking and cook again on the other side for another minute or until the batter is cooked and vegetables are light brown.
  5. Repeat same for the rest of the uttapam batter.
  6. Uttapam is ready to serve. 

 

  • Uttapam is best served with Coconut chutney or  Sambhar.  
  • You can sprinkle some sambhar powder also if you like. Add when it's time to add salt and pepper to the uttapam .
  • Use whatever vegetables you have in your kitchen. You can make uttapam exotic by adding broccoli, red cabbage, red or yellow bell peppers or even zucchini.
  • Cheese can be added to the uttapam if you want it richer in taste.
