Lime Cake with Lime Curd

If you love citrus fruits, then you gonna love this lime cake for sure. Lime cake is a very moist cake fully loaded with the lime flavor. In this recipe, lime curd is poured all over the cake hence making it more scrumptious and delicious.

And the less guilty part of this particular lime cake is that I use whole wheat flour in this recipe but still not compromising with the texture and taste of the cake. Yes, you heard right it is healthier version of lime cake and whole wheat flour gives the cake a nutty flavor. Now about the lime curd, it is an egg and lime based sauce which is thick, glossy and has a pale yellow color. Lime curd is sweet and sour sauce which is perfect as a filling or icing for the cake or bread. 

If you love lime flavor, then you will be very happy to try out this cake, as this lime cake is sweet, tangy and so flavorful with a punch of extra lime flavor thanks to the lime curd.

Ingredients

  • 1 and 1/2 cup of whole wheat flour/all purpose flour/cake flour

  • 1 & 1/4 tsp of Baking powder

  • 1 tsp of Baking soda

  • 2 pinch of salt

  • 1/2 cup of oil

  • 1 cup of sugar

  • 2 eggs

  • zest of 2-3 limes

  • 1/2 cup of yogurt

  • 2 Tbsp of lime juice

  • 1 tsp of vanilla extract

  • ​​For Lime Curd :-
  • 1/3 cup of lime juice

  • 3 eggs

  • 3/4 cup of sugar

  • 1 tsp of vanilla extract

  • 1 tsp of lime zest

  • 2 Tbsp of butter

Directions

  • Preheat oven to 375 F. Grease and flour 8 inch cake pan.
  • Sift and mix flour, salt, baking soda and powder in a bowl.
  • In another bowl, beat 2 eggs with sugar then add oil, lime juice, yogurt, zest and vanilla extract.
  • Blend dry ingredient into wet one little by little.and mix well. Do not over mix it.
  • Pour batter into prepared pan and bake for 20 min then lower temperature to 350 and keep again for 20-25 minutes .
  • Method for Lime Curd :-
  • Here we are doing double boiler method. For that boil water in a sauce pan. When it starts boiling, lower the heat and let the water simmer.
  • Mean while crack the eggs in a glass bowl large enough to put over that sauce pan. Now add lime juice, sugar to the eggs and whisk well.
  • Place that egg mixture bowl over the simmering sauce pan and whisk it continuously for about 10-12 minutes until the egg mixture is thick enough to coat the spatula.
  • Then remove the glass bowl carefully from the hot pan and mix vanilla, zest and butter.
  • Let it cool down and refrigerate it .
  • Assembling :-
  • When the cake and lime curd cools down, spread the lime curd over the cake .
  • Or you can cut the cake horizontally from the center, then take the top part off carefully and spread the lemon curd on the lower part and finally put back the top part . Lime cake with lime curd is done.

Notes

  • You can store left over lime curd in the refrigerator for a week. Use lime curd in place of jam or drizzle over muffins or pancakes.
