Strawberry Crisp

Here comes the season which brings beautiful red strawberries lying around in the farmers market and screaming pick me up, so I thought why not use these juicy strawberries and make a dessert which is yummy, delightful and yet easy to make. Crisp is an easy dessert recipe in which fruit pieces are layered with oats and flour mixture and baked to a crispy perfection and from there it gets its name “crisp”. 

In strawberry crisp, cut up strawberries are mixed with orange juice, sugar and lemon zest and then layered with a mixture of oats, flour, butter, brown sugar, cinnamon and baked to a crispy delight. There is one more addition which can make this strawberry crisp even more delicious and that thing is plain old vanilla ice cream. I do not know why but the idea of having hot dessert with cold ice cream is just crazy good and divine. So strawberry crisp is like a combination of sweet, sour, hot and cold all together in one bowl. Who does not want that??

Strawberry crisp is a fruity dessert which is perfect when you do not want to spend a whole lot of time in kitchen. The best part about this dessert is that you can do all the preparations a day before and next day you just have to bake and serve. You just have to prep and store strawberry filling and topping in two separate airtight container in the refrigerator a day before and next day, lay the strawberry mixture in the baking dish and top it with oats mixture and bake until the topping is golden brown and strawberries are bubbly.

Strawberry crisp is cut up strawberries mixed with orange juice, sugar and lemon zest and then layered with a mixture of oats, flour, butter, brown sugar, cinnamon and baked to a crispy delight.

Ingredients

  • 1 lb of strawberries, quartered

  • 1/2 cup of brown sugar

  • 1/4 tsp of orange zest

  • 2 Tbsp of orange juice

  • 1 tsp of lemon juice

  • 2 tsp of flour 

  • Topping :-
  • 1 cup of oats

  • 1/2 cup of all purpose flour

  • 6 Tbsp of cold butter

  • 3/4 cup of fully packed light brown sugar

  • 1/4 tsp of cinnamon powder

Directions

  • Preheat the oven to 350 F .
  • Cut the strawberries into quarters and mix it with flour, orange juice, zest, sugar and lemon juice .
  • Then in another bowl, toss all the ingredient listed under topping and mix until the mixture looks like bread crumbs. You can do it in a food processor or just mix by hand.
  • Now lay the strawberry mixture into the 8 inch baking dish and top it with the oat mixture and bake it for 40-45 minutes, until the topping is golden brown and strawberries are thick and bubbling. Strawberry crisp is ready to serve.

Notes

  • Serve strawberry crisp with vanilla ice cream.
  • You can use apples, pears, blueberries, raspberries, peaches, mangoes or mix of any of these fruits instead of strawberries.
